Things you need:
- A little bit of olive oil (sunflower oil will do)
- 2 onions, chopped
- 2 garlic cloves, chopped
- 2 medium carrots, sliced and chopped
- 2 tablespoons plain flour
- 4 teaspoons curry powder
- 600ml chicken stock
- 2 teaspoons honey
- 4 teaspoons soy sauce
- 2 bay leafs
- 1 teaspoon garam masala
- Packet of chicken gujons or breaded chicken
What you need to do:
Best served with sushi rice.
For the chicken:
- Pop some chicken gujons or breaded chicken in the oven as you start preparing the curry sauce below.
For the curry sauce:
- Heat oil in a saucepan, then add the onion and garlic and cook until nicely soft.
- Stir in carrots and cook at a low heat for about 10 minutes.
- Add the flour and curry powder and cook for 1 minute. Pour in the stock and stir until combined.
- Add the honey, soy sauce and bay leafs. Bring to the boil.
- Turn down heat and simmer for 20 minutes or until sauce thickens but is still of pouring consistency.
- Chop up the chicken pieces and add them to the curry sauce, leaving for a few minutes after.
- Stir in garam masala just before sirving.
