Chicken Katsu Curry

Best served with sushi rice.

For the chicken:

  1. Pop some chicken gujons or breaded chicken in the oven as you start preparing the curry sauce below.

For the curry sauce:

  1. Heat oil in a saucepan, then add the onion and garlic and cook until nicely soft.
  2. Stir in carrots and cook at a low heat for about 10 minutes.
  3. Add the flour and curry powder and cook for 1 minute. Pour in the stock and stir until combined.
  4. Add the honey, soy sauce and bay leafs. Bring to the boil.
  5. Turn down heat and simmer for 20 minutes or until sauce thickens but is still of pouring consistency.
  6. Chop up the chicken pieces and add them to the curry sauce, leaving for a few minutes after.
  7. Stir in garam masala just before sirving.
