Ingredients
- A little bit of oil
- 1 onion,chopped
- Some ginger, finely chopped
- Small chilli (omit if you don't have any)
- 2 sweet potatoes, chopped (1-2cm cubes)
- 2 tablespoons curry powder
- Tin of coconut milk
- Tin of chopped tomatoes
- Tin of chick peas
- Fresh or frozen spinach
(To serve)
- Rice
- Curry "bits" (onion bhaji, samosa, etc)
Method
Heat some oil in a pan and chuck in:
- Onion
- Ginger
- Chilli
2 minutes later add:
- Sweet potatoes
- Curry powder
2 minutes later add:
- Coconut milk
- Chopped tomatoes
- Chick peas
- Spinich
Get some rice on, and chuck some ready made curry "bits" in the oven
Cook for a while (30 minutes?) until the sweet potato is no longer hard
